The one thing which is common between all the festivals across the world is the delight of having delicious food. And everyone knows that Dessert plays a very important part in that mouth watering meal. There always lies one or two sweet dishes which are usually prepared based on the festival. Like cakes and mazapans during Christmas, Ladoos during Diwali, and such is a dish called Seviyan which is prepared by most of the muslims during Eid.

This dessert is too scrumptious to resist. Also, the best part about Seviyan is that it is easy to make and does not require much effort. The basic ingredient of Seviyan is Sevai (Vermicelli) and there are many different versions of this sweet dish. Here we share the recipe of Seviyan cooked in milk, also, known as Seviyan kheer.

 

Ingredients

  • Butter – 2 tbsp
  • Sevai (Vermicelli) – 100 gms
  • Milk – 600 ml
  • Sugar – 3 tbsp or as required
  • Cardamom cloves – 3 to 4 (powdered)
  • Saffron – 8 to 10 strands
  • Dry fruits of your choice

(Pistachio, Cashew nuts, Almond, Raisins)

Method

  1. Pour the milk in a pan and bring the milk to a boil. Add cardamom  powder to the boiling milk and let it boil until it is reduced to ¾ th of the quantity.
  2. In a different pan, heat butter and fry (Vermicelli ) Sevai. After 5 minutes, add dry fruits and fry together until Sevai turns light brown in color.
  3. Add the fried Sevai into the milk pan and mix with it. Combine ingredients together and add saffron. Stir in between. Cook until done.
  4. Garnish with some dry fruits and serve hot. You can also refrigerate it for 2-3 hours and serve chilled.
